- Remove the stalk of the aubergine. Cut slices of between 0.5 and 1 cm thick. Coat with olive oil.
- Heat a grill pan or panini press/toaster. Grill the slices until cooked.
- Cover half of the slices with your favourite cheese, vegetables, pesto, and/or meat, and then place the other slices on top.
- Gorgonzola or other blue cheeses and sage
- Mozzarella, tomato, and green pesto
- Ham and mozzarella
- Green pesto, tomato, basil, and Parmesan cheese
- 2 aubergines
- Olive oil
- Salt and pepper
