Stewed Mini Graffiti


  1. Preheat the oven to 180° C.
  2. Cut the mini Graffiti eggplants lengthways into 4-6 parts and halve the tomatoes.
  3. In a low oven dish, mix the eggplant parts with the tomato halves, olive oil, balsamic vinegar, and garlic; add salt and dried red pepper to taste.
  4. Place the dish on a rack in the middle of the oven and roast the eggplants for approx. 25 minutes.

Delicious with pasta or couscous!


  • 200 gram Mini Graffiti

  • 150 gram cherry or mini plum tomatoes
  • 1½ tbsp olive oil
  • 1 or 2 tsp balsamic vinegar
  • 1 or 2 garlic cloves, finely chopped
  • Salt, dried red pepper
