- Preheat the oven to 180° C.
- Cut the mini Graffiti eggplants lengthways into 4-6 parts and halve the tomatoes.
- In a low oven dish, mix the eggplant parts with the tomato halves, olive oil, balsamic vinegar, and garlic; add salt and dried red pepper to taste.
- Place the dish on a rack in the middle of the oven and roast the eggplants for approx. 25 minutes.
Delicious with pasta or couscous!
