Baked Mini Graffiti with sautéed langoustines

Preparations

  1. Marinade the Mini Graffiti slices with extra virgin olive oil, salt, pepper and rosemary.
  2. Form a sliced Mini Graffiti circle on the greaseproof paper and bake in the oven for 2 minutes at 180 degrees. Then place something heavy on top of the Mini Graffiti aubergines.
  3. Place the langoustines, tomatoes, artichoke and peas on top of the Mini Graffiti aubergine. Garnish the dish with cress and/or herbs.

Ingredients

  • 12 Mini Graffiti, cut into 2 mm slices

  • 20 langoustines, sautéed

  • 4 violet artichokes, cooked
  • 4 cherry tomatoes, baked
  • 4 tbsp peas, boiled
  • Extra virgin olive oil
  • Rosemary
  • Ground pepper from grinder
  • Salt for seasoning
  • Greaseproof paper
