Aubergine sandwich


  1. Remove the stalk of the aubergine. Cut slices of between 0.5 and 1 cm thick. Coat with olive oil.
  2. Heat a grill pan or panini press/toaster. Grill the slices until cooked.
  3. Cover half of the slices with your favourite cheese, vegetables, pesto, and/or meat, and then place the other slices on top.


  • Gorgonzola or other blue cheeses and sage
  • Mozzarella, tomato, and green pesto
  • Ham and mozzarella
  • Green pesto, tomato, basil, and Parmesan cheese


  • 2 aubergines
  • Olive oil
  • Salt and pepper
